Carignan is perfectly suited to the moderate climate of Langhorne Creek. And as we seek to make more fun, interesting new wines under the Domestique label, Carignan (long a favorite of ours) was an easy choice in grape variety for us to work with.
Everything about this wine leans toward deliciousness! Deliberately light, weighing in at a modest 12.1% alcohol, this wine screams for second and third glasses. We didn’t try to make a blockbuster, just destemmed fruit tipped to a single steel tank open fermenter and away we go. Ferment to dryness in tank to preserve those wonderful fruits and florals, rack off gross lees add a little S02, a light filter and bottle after only 3 months in tank.
