2025 Domestique 'Healesville' Pinot Noir, Yarra Valley VIC NEW RELEASE!

Fruit sourced from the Valley Farm vineyard, a site nestled amongst national forest on the road toward Toolangi. We picked at optimal ripeness, and handsorted both on the tractor and back back at the winery before processing. 

After a brief cold soak, we fermented 30% whole bunches atop 70% destemmed fruit in 2 open steel fermenters. After 2 weeks on skins, and a quick footstomp to break up the bunches, the ferments were drained and pressed to tank. Once dry, the wine was transferred to season French 500L puncheons to undergo MLF and maturation. 

In early winter, these barrels were racked and returned, to ensure a brighter, more primary fruited style. Then in September, the wine was transferred to tank, settled and gently filtered pre bottling in October 2025. 

On the nose there’s a lovely vibrancy to this Pinot Noir, brimming with classic Yarra Valley red cherry and hints of charcuterie, bramble and spice. The palate is both juicy and moreish, propped up by mouthwatering acidity and ultra fine tannins to finish. Just a lovely ‘drink now’ style, with plenty of glossy fruit encouraging you to pour a second glass!

  • The growing season and ‘22 vintage was undoubtedly cooler, so the wine displays savory hints underneath lovely regional fruit in a lighter, finer boned package.

  • A 50/50 blend of 2 Pinot Noir clones, MV6 and 115, all fruit was destemmed and after a short cold soak, the grapes were fermented evenly for 11 days before pressing to tank then racking to barrel for MLF and maturation.

    After only 6 months in oak (5% new) we opted to bottle without fining, but lightly filtered to provide a little gloss and mouthfeel. Due to this vineyard elevation being nigh on 900m up, we find there’s a ‘natural acid tingle’ keeping the wine lively whilst remaining soft and moresish to the finish.
