Whole bunch pressed, 40% direct to 500L French puncheons (15% new) with the residual pressed to tank, cold settled for 48 hours then racked off solids to older puncheons for wild fermentation. 35% MLF and lees stirred twice and 8 months maturation before fining with bentonite clay and a light filter pre bottling in November 2023.
