60% destemmed and wild fermented on skins for 8 days. 40% whole bunch pressed to tank, cold settled off solids then racked to barrel for fermentation. Partial MLF (25%) and racked off gross lees during winter, matured in neutral 225L barriques for 6 months pre bottling in September 2023.
